If you've been sucked into the media hype that beef is "what's for dinner," you owe yourself the blessing of reading this transcript of the Oprah show that caused so much trouble with the Beefy Boys.
are a dying breed
Don't let the world convince you that you must eat dead flesh to be healthy or strong. The dead flesh putrifying in your intestines does absolutely nothing to make you healthier or stronger, in fact it does just the opposite, releasing toxins into your body, the deadly process starting as early as when the dead flesh touches your saliva to the time it plops into your tummy, and then especially the process gets underway when the flesh begins to atrophy in the upper and lower intestines (generally gumming up the whole works, one piece of meat can take quite a long while to break down, and then sometimes it doesn't break down all the way, a little memento to keep you company on sleepless nights with Scrooge's bit of potato).
No, we don't live in the Garden of Eden, but then again there are plenty of healthy choices available to us, right in the here and now (if you haven't read Fast Food Nation by Eric Schlosser, you owe it to yourself, BIG TIME, the information could change, elongate and possibly SAVE your very life). Even more importantly, read SuperFoods HealthStyle by Stephen G. Pratt, M.D., and Kathy Matthews.
SuperFoods HealthStyle. Do yourself a favor and purchase it. It's also a great audiobook. Get the best scientific lowdown on healthy eating, and what foods truly are miraculous.
Vegetarians live longer, healthier, lighter and generally all-around happier lives, coping better with stress, and with all-around better blood circulation which is the primary attribute to being a better lover (sorry milk drinkers).
But if you become a vegetarian (or ARE a vegetarian) you have to be more vigilant than the carnivores -- vigiliant in eating a balanced diet, complete with grains, fiber, complex-carbohydrates and protein, starch, fruit and vegetables, and plenty of pure water (and fresh air and exercise, preferably together, are great when you can get them). I don't say "be more vigilant" because it is more difficult to be healthy when you don't gobble dead animals, but because the American (and most) society(ies) is(are) all geared around dead animals at meal time, therefore a vegetarian must need to think differently, and be careful about where and what and why he/she eats.
Especially at first, it can be tough, to make the lifestyle change, to live a healthier and more peaceful life, but the benefits and blessings are overwhelming in comparison to any hardship or difficulty or expense. When the world says "meat" you have to think resourcesfully, and get your mindset out of that deceitful box.
Don't ever think that being a vegetarian means switching to eating only salads, or a bland diet of "rice and beans," "rice and beans" and more "rice and beans." People on such diets are as unbalanced and unhealthy as your average carnivore, except due to lack of protein they are much weaker than their flesh-munching compatriots (but in times of emergency, rice and beans will keep you alive and kicking).
Following are some very important staples in the vegetarian diet, and if you haven't considered them, please do so now!

WILD BLUEBERRIES

Say YES to blueberries, even frozen blueberries are a good idea (easily blended into smoothies or shakes). In even smaller portions blueberries are plump with more health than apples or carrots or bananas. Science is only just now waking up to the fact that blueberries contain more of the miraculous chemicals and antioxidants, phytonutrients and healthy sugars that fight cancer and alzheimers and many other lethal and debilitating diseases. Tasty, they can be consumed all on their lonesome, baked into muffins, or plopped into any cereal. Used in cooperation with soy and various seeds and other natural fruits and vegetables, blueberries can change your life (and protect it too).

EZEKIEL BREAD

Probably the most delicious bread in the world, and the most important thing: it is almost miraculously healthy! Complete with ALL NINE essential amino acids, and containing a total of 18 amino acids. Better yet (CAN you get better than tasty and healthy?), this bread is inspired by the Bible, Ezekiel 4:9: "Take also unto thee Wheat, and Barley and Beans, and Lentils, and Millet, and Spelt, and cut them in one vessel, and make bread of it..." The following is from their bread package:

"We discovered when these six grains
and legumes are sprouted and
combined, an amazing thing happens.
A complete protein is created that
closely parallels the protein found in
milk and eggs. In fact, the protein
quality is so high, that it is 84.3% as
efficient as the highest recognized
source of protein, containing all nine
essential amino acids. There are 18
amino acids present in this unique
bread -- from all vegetable sources --
naturally balanced in nature.

Ezekiel 4:9 Bread, made from freshly
sprouted organically grown grains,
is naturally flavorful and bursting with
nutrients. Rich in protein, vitamins,
minerals and natural fiber with no
added fat. This is the true essence of
food. We add absolutely no salt to
this bread. Try it served warm to
release its rich nutty flavor.

Different from most breads today,
this unique bread is made from freshly
sprouted Live grains and contains
absolutely NO FLOUR. We believe in
sprouting the grains we use in our
breads because sprouting is the best
way to release all of the vital nutrients
stored in whole grains.

To unlock this dormant food energy,
maximize nutrition and flavor, we add
just the right amount of water to
healthy whole organically grown grains
which are already bursting with
nutrients. Beneficial enzymes are
activated which cause the grains to
sprout and become a living food. Our
exclusive sprouting process not only
significantly increases vitamins and
minerals such as Vitamins A, C, and
Bs, calcium, iron, magnesium and
potassium, but also causes a natural
change that allows the protein and
carbohydrates to be assimilated by the
body more efficiently. And even better
still, our exclusive baking process
preserves these valuable nutrients
and retains the important natural
fiber and bran."

Aside from all the health benefits, it really is delicious, and weighty enough to satisfy (especially if you are accustomed to "wonderless" bread in all its white varieties). If you do a search on the Internet you can also find several free recipes and instructions on how to make it in your own oven or breadmaker. And now the same people who brought you Ezekiel Bread, heroically provide GENESIS BREAD, which is even tastier than Ezekiel, comprised of sprouted seeds, even sunflower seeds! It's GRRRRReeat (sorry Tony!).

SOY MILK

When I was a kid someone forced me to taste "soy milk" and I almost died. But today the stuff is far more delicious than regular milk, in fact, I think it tastes like a milk shake. The best soy milk, in my opinion, is SunSoy (Silk is also good) which comes in regular (the best) as well as vanilla (my wife and kids prefer this) and chocolate (great as a coffee creamer).
Don't buy into the negative campaign being launched by the dairy industry and all their goons -- soy milk could very well be the very first nail in the dairy industry coffin, and don't expect them to kick up their heels in joy about that fact. Yes, they have the moolah to spread propaganda with their silly advertising campaigns on billboards and television all over the world, but the fact is, soy is better for you (unless you're one of those odd people who adore phlegm, which possibly is quite good, but I personally can't bring myself to partake of it, in any large doses anyway), and it tastes better too (and doesn't produce phlegm).
Not many people realize that dairy milk actually comes out of a cow's ample breasts, and the sad fact is that not many know exactly what a cow IS, save that it is in some way associated with jumping over the moon, and the word "mooooo!"
The fact is, there is no mythical dairy maid with plump cheeks, meaty muscular arms, her hair tied fetchingly in braids, swinging a tin pail and a little three-legged stool, robustly squatting down to massage a cow's udder (the notion is udderly ridiculous), squirting pure white nectar into her tin pail, which a cheery, white-garbed milkman delivers to your door at 7:00 a.m. sharp.
The reality is poor animals pumped full of female hormones (which your "healthy bodied" body-builder quaffs) to produce more milk, more milk, more milk, stuck in dark stalls all day, draped with electric suckers noisily humming away, chaffing poor cow nipples, the poor bovines eating things that cows were never meant to eat (that's how brilliant cattlemen came up with the brilliant idea of mad cow disease -- stick the cattle on Atkins and feed them high protein sheep brain souffles, forgetting of course that the cow is a natural vegetarian, much like people, except that cows have more sense than people in sticking with what they're supposed to eat, unless brilliant cattlemen can trick them into eating diseased sheep brains).
Somehow the dariy industry forgets to stick all that stuff in their happy commercials of sickening milk moustaches and "healthy bones" families on leave of absence from toothpaste and sugarless gum commercials.
Go with the soy, it is healthy, natural, your body utilizes it much, much better, and it tastes better than the stuff running in bloody rivulets from concentration camp cows (and it can aid women going through the change of life, and all people have healthier hearts and circulatory sytems).

TUB MARGARINE

You've probably received that ridiculous spam e-mail message that claims that cow butter is healthier than margarine, humorously claiming that butter smells worse and attracts more flies (okay, so that part was true), but the fact is there are some healthy margarines out there right now, made from 100% vegetable produce (not plastic as the spastic e-mail "scientist" theorizes). Go with the big tub margarine, and make certain that it does not contain hydroginated (or "partially hydroginated") oils of any kind, and look a little closer and purchase the kind that says "no trans fatty acids" or "no trans fats." They are out there, and they taste great, and they are probably 300% healthier for you to consume than butter (and for those Atkins butter quaffers, beware, many butters are hydroginated). Back to that spastic e-mail, try this experiment: side by side by side place a tub of margarine, a stick of butter, and a dead rat, leave them for two days, come back, and I can guarantee that one of the treats will be drawing quite a few more bugs and maggots. Do you wanna spread this on your toast?

EXTRA VIRGIN OLIVE OIL

Use this for cooking, fried foods, and in other recipes that call for oil (although some recipes probably won't work with the olive oil taste). Olive oil is good for your heart, your arteries, your digestion, and it does not turn to fat (in fact it will aid in breaking down and digesting fats).

HIGH-LIGNAN FLAX SEED OIL

Go for it. Not easy to find (chiefly at health-food stores) and must be refrigerated or it goes rancid, but it is pure health in a bottle. You can put it on popcorn, add to health milk shakes, stir a teaspoon into coffee (or Pero, Roma, Postum or Coo-coo Carbo Coacoa), a tablespoon on all cereals or oatmeal, or stirred into any kind of cooked food.
Flax seed oil is a liver-friendly oil that aids in eliminating toxins, boosts the metabolism and aids in breaking down fats.
I like "Spectrum Essentials" organic high-lignan flax oil, which is the king of healthy fatty acid promoters, the highest and most potent vegetarian source of Omega-3 (11 grams per tablespoon), plus Omega-6 (3 grams), Omega-9 (2 grams) and Stearic, Lauric, Palmitic (1 gram combined). Talk about your super essential amino acids! The bad news is that a 24 ounce bottle costs in the neighborhood of twenty bucks (ouch! but worth it, if you can afford it).

FLAX SEEDS

A healthy and good source of fiber, plus they're kind of tasty, too. You can sprinkle them on salads, mix into healthy milkshakes, oatmeal, any cooked dish. They can be ground (in a clean coffee grinder) for even more nutritional value, and the best news is that they are relatively cheap!

APPLE CIDER VINEGAR

Not to be confused with white vinegar or balsamic or wine -- but pure apple cider vinegar (be careful, many supermarkets carry a product called "apple cider vinegar," but in fact what it really is, is nothing more than plain white vinegar with apple flavoring, or in some cases vinegar with added cider, which is not even close to the same thing).
There are many wonderful blessings to this product, including one of the best "cures" for arthritis. Seriously, try mixing two tablespoons of apple cider vinegar with hot water, a teaspoon of honey, and green tea (or "Apple Cinnamon Tea"), and it really lessens the pain of arthritis (I'm speaking from experience here -- I also find that it helps with asthma and seems to improve my eyesight, if only temporarily).
There are very many good brands to choose from at health food stores, but I suggest Bragg's Apple Cider Vinegar (www.Bragg.com) -- it's made to the highest standards with health and purity of product in mind.

MORNINGSTAR FARMS

This is one of the best producers of delicious and healthy vegetarian foods -- if you haven't tried their products yet, get moving. Wonderful hotdogs (that are healthy) and bacon (did I mention healthy?) and meat pies (that are healthy) and hamburgers (quite healthy) and all of this was . . . hmmm, what was it? Oh yeah, that's right, HEALTHY! Did I mention tasty, too? Great supply for lean high protein. Breakfast sausages (nice and greasy), corn dogs (delicious and nutritious). Available at most supermarkets (and if your favorite market doesn't carry Morningstar, ask them, they will probably be happy to start carrying!).

SCOTT ADAMS

One of the most hilarious writers and cartoonists around, and vegetarian, too! Read this little ditty from his Dilbert Newsletter (and do your best not to die laughing):

That's Why They Call It a DIEt
------------------------------------

I'm a vegetarian, which, as you know, means that I can't lift heavy objects without snapping my spine. I'm secure enough to admit that I'm pale, frail, and I love e-mail. (Hey, I think I just designed a t-shirt!) But there's a plus side to my eating habits: I'll live to the age of 200 unless I get trapped under something heavy, like a quilt. And unlike my mammal-eating friends, I don't have to decide what sort of hideous death I want every time I look at a menu.
For carnivores, there are two popular diet plans. The first one involves eating anything that can't outrun you, whether said object is capable of traversing your entire intestines or not. It's the most popular diet plan in America and it's catching on around the world. This group of eaters prefers as their method of demise the traditional, no-nonsense heart attack.
Then you have the low-carb dieters. This involves the active avoidance of life-giving antioxidants while scarfing massive amounts of known carcinogens until someone punches you to death for bragging about how much weight you lost.
Some fast-trackers shed their mortal coil using such flashy methods as Mad Cow, e.Coli and whatnot, but I consider that grandstanding.
Evidently, what we need is a DNRC Diet Plan designed especially for Induhviduals. We need a volunteer to write a bestselling diet book that benefits everyone except the people who use the diet. For example, I think the diet plan should encourage the eating of whatever we think there's too much of: lawyers, pigeons, cigarette butts, and that sort of thing.
Your first reaction might be that no one will eat horrible things just because a diet book says you should. But I have a one-word response to your short-sighted thinking: sauce.
That's right, sauce. Most people think that cows are delicious, but they don't stop to think how much work went into changing the taste from its original cow flavor. Realistically, you wouldn't order any kind of food that was labeled "cow flavored." Fortunately, great cooks can disguise the flavor of anything. If you try to tell me that Emeril Lagasse can't make delicious chowder out of cigarette butts, then I say you haven't seen his show. The man is a miracle worker.
Then there is the issue of health and nutrition. Ha ha! Just kidding. But seriously, the sauce will make everything taste great.
